Ina Makes a Dinner Comeback – Barefoot Contessa 58

It’s winter in New England, and even though we haven’t gotten any significant snowfall, we have had a few chillier days here and there. What’s the best way to end a cold day? A warm and hearty pasta dish. If you’re looking for something super simple and flavorful, then you MUST give this Ina Garten pasta recipe a try. Trust me, you won’t be sorry. I’m patiently waiting for an excuse to make this guaranteed crowd-pleaser once again.

This recipe can be found in Cooking For Jeffrey and it’s called Rigatoni with Sausage and Fennel.

Sadly, it’s been so long since I made this dish, that I don’t have too much to say.

This is a meal for both pasta lovers and meat lovers. There’s also so much you can do with it to change it up. If you want to use spicy sausage? Go ahead! Enjoy the sweeter meat? That’s fine too. Can’t find sausage not in a link, you can try slicing the links and adding in the coins instead.

Don’t enjoy rigatoni? Though I don’t think we could be friends if you didn’t like rigatoni, this recipe will work with any larger pasta, such as penne, bowtie, or medium shells.

This high-fat meal allows the flavors used to really blend and come together. They result is something that is worth trying and is definitely a stick-to-your-ribs kind of meal. Though you may be tempted, it’s best to limit your consumption of this meal solely because of the fat content and the amount of carbs you will undoubtedly consume.

Here’s a picture of my serving, sadly, the only photo I have of this meal. It’s pretty cold today, maybe that calls for a repeat of this dish! It’ll definitely keep me warm and full.
