This Friday begins a new chapter in our lives — 2021.
For many of us, the new year will bring hope and joy after a difficult 2020.
Normally on New Year’s Day, my family and I would be gathering at my aunt and uncle’s house to have Cornish game hens, stuffing, a plethora of side dishes, and amazingly tasty desserts made by my grandmother.
That isn’t going to happen this year.
Instead, I will be cooking for my immediate family.
Today, I will be making a plant-based meal. Plant-based? You say? Yes!

One of the goals I have for 2021 (I don’t call New Year’s Resolutions “resolutions.” I call them goals) is to increase the amount of plant-based meals I create and consume. So what better way to do this than to start the year off on a plant-based note?
This is also a tie-in to an upcoming cookbook review post that will be releasing on Thursday. After reviewing the cookbook, I felt almost an obligation to make one of the recipes from it.
So, I am spending my day creating a Mediterranean inspired meal. Stay tuned for a photo of it when the cookbook review drops!
